I suggest you go to the library and get out a few different recipe books and have a bit of practise at home.

Or you could have a look at the recipes you will be likely to cook and get some similar recipes off the internet to practice

First of all, practice at home as you can. Get a recipe book like the red and white checked one from Better Homes and Garden or Fannie Farmer is good too.

Pay attn when you are being instructed. I don’t know if it is practical to suggest taking notes but if it would not make you look stupid you might consider that or a pocket recorder.

Most ‘new’ cooks tend to over spice and over season things. So beware of that.

Next time you ask a question, too, try to pick one thing – Like how do I roast a turkey, make a pie crust or some such like that. This is such a general question it is hard to know what to answer. ;) Good LUCK!

first of all don’t be scared about cooking because that can’t really mess things up, and believe me with the stress of the kitchen its not cool, and cook as if you were cooking to your family

Congratulations! Personally, I think you are going to do very well, since you are concerned enough to look for help!

That said, they said they will train you! So, take notes if you need to. Watch & learn.

In the meantime, I think a few searches on the internet might help you learn some things too. Maybe look for some sites that talk about Professional Cooking, because it is different to cook for crowds! And, keep in mind that different restaurants have different ways of doing things? There is a book called Professional Cooking, maybe look at that at a library? (I got a copy from Costco, years ago.)

Have fun, work hard and you’ll be running the place in short order!
